    A family-run authentic Mexican food truck in KCK. The menu is different every time he is out but so far I tried and liked tortas ahogadas and gorditas. Tortas ahogadas are served dipped in hot sauce in a large ziplock bag because that's the only way to handle them. Gorditas are crunchy on the edges filled with pork or beef with beans and hot salsa.     I've been lucky enough to get Indios Carbonsitos for breakfast a couple of times over the last couple of weeks, this is a special treat because I often do not find myself out and about at the times or locations that the truck is out and about as well. First time I had two Carne Asada burritos. Wow. You know food is good when you close your eyes to chew it to hold back the tears of joy. I didn't wash my hands for awhile after eating either so I could still smell the yumminess left on my fingertips. This week I tried a Chicken Tinga burrito to go with my Carne Asada... there's nothing wrong with the chicken tinga, it's just not my taste. The heat was perfect, but I am not a fan of the taste of chipotle. I'd eat it again, though. I've had a variety of foods from Indios Carbonsitos: hamburgers, hot dogs, brisket, tenderloin... it's all good... oh and whole chicken...that was awesome too.

    Sometimes a place is hyped up and it lives up to the hype. Other times it's hyped and falls quite short. Indios definitely falls into the latter category. It's unfortunate since I really, really, really wanted to love their food. I've been several times. The food was average. But that's fine. The stand out is supposed to be the ahogado but I don't eat pork so I won't get to try it. I've tried a few of their other items and everything tastes fine. Just average. Not a standout on the BBQ end nor the Mexican end. That's so disappointing because there's just such potential. What kills me, though, is not once have they ever gotten my order right. You are assembling it from scratch, right? I can understand if it's pre-made but if you make it from scratch, a couple substitutions or just leaving one or two things out (cheaper for you!) should be easily doable. Nope. They've gotten it wrong. Every. Single Time. Once, I even had to get it remade two or three times (I lost track) because they just couldn't get it right. Seriously? This is really what gets them knocked down to two stars. So I guess if you go, go for the ahogado and don't change it at all because I guarantee they'll get it wrong.

    Really nice people. I've caught up with them on several occasions when they've been out and about. They do Mexican food, and cook it quite well. I've had their quesidillas, tamales, and raspberry tamales. I think the quesidillas might be my favorite, but on different days, they tend to offer different things. Maybe the bbq nachos are my favorite, or the tamales. Once, in Raytown, I had their barbecue nachos. It was way more than I could eat, which made 2 excellent meals. They didn't put much gloppy cheese on it, (like I requested) and the nachos were even good at the second meal. It pulled pork, bbq sauce, and fresh vegetable. Little cheese. I like their tamales too. Heck, I generally like it all. If you make a special request, they will go out of the way to make the food for you, say, no dairy sauce, or no cheese. No problem. They are polite and nice about it. I didn't try one of their burgers yesterday. I probably should've but this truck seems to get out and about. Including the areas around where I live. I follow them on FB, and Twitter, and keep up with where they are. They've had a couple of mishaps to get around in the past, but thank goodness they they did it, and are successful.

    I have been waiting a long time to run into this particular food truck - and believe me, it didn't disappoint. I have the Indios Nachos with tasty morsels of carne asada on the top. The cheese was so tasty and the chips really crispy - it was Nacho perfection! The chihuahua dog was amazing! The cojito cheese really makes this hot dog! If you are out and about and see this truck - stop for some amazing food!

    Eat ANYTHING & EVERYTHING on the menu! It's all WONDERFUL! And make sure to tip his kids, they are enthusiastic and delightfully helpful! Adrian Bermudaz (the owner and guy in front of the grill) has done an amazing job bringing his unique Mexi-Q food to our streets!

    Adrian is my buddy as I must see him nearly once a week now-a-days. My new love has become the Ackel sandwich and the brisket burger. I still have a love for all the others as well. Now that he has gotten so popular, I have to make sure to give him a text of my order so he doesn't run out on me. Him running out of my fav foods has caused near murder from the roomie. I can never go back home empty handed.

    I have had the pleasure of eating at this Mexi-Q truck a number of times and I am still working my way through the menu. So far I have had the fish tacos with fresh salsa and all the appropriate fixings (lime, cilantro, onion). Top notch and as good as a sit down joint. I have had the Torta Ahogadas and it is a site to behold and dive into. You really can't eat it you have to dive into it. I have also had the Akcel on a couple of occasions and it makes a philly philly stand up and take notice. Great sandwich and ask Adrian to spice it up if are so inclined. Indios Carbonsitos is family owned and operated and should be considered a KC Food Truck treasure. I support their efforts. Try them, you should support them too!

    *I'm reserving a 5th star until I've tried more items* Ive been to Indios twice, and both times I've ordered the outstanding tortas. These are the best I've personally ever had. They are big, tasty, and sloppy! Seriously, they're like a french dip sandwich; totally covered in delicious sauce. They offer 4 heat levels, and although I love spicy, level 4 was really hot. Next time I'll do level 3. I have not tried any other of their offerings, thus the 4 star, but I get frequent tweets and FB updates on their location and menu, and I'm very excited to try new items. If only I could say no to that torta! Keep up the great work, and keep the KC food truck scene rolling.

    I saw a review of Indios Carbonsitos on Yelp several months ago and had to try the food. A fusion of Mexican and BBQ is right up my alley, so the first thing I tried was the torta ahogado. I can't say in words how delicious this sandwich was--and it was also HUGE. Every bite was a mouthful of flavor. Since then I have tried the bbq pork tamale, strawberry tamal and bbq nachos. (If it sounds to you as though that couldn't possibly be good, I DARE you to try it. After my first bite, I couldn't stop eating it.) Everything I have eaten has been fresh and tasty. Last weekend I tracked down Indios Carbonsitos at Gilham Park on the promise of breakfast burritos. My burrito was only $3 and it was fabulous! The chorizo made it! This is delicious and affordable food served up by friendly and gracious people.

    Indios Carbonsitos is a amazing Mexican/BBQ fusion food truck operating in KCMO/KCK that is well worth hunting them down to dive into their torta ahogada. First, I had been following Indios Carbonsitos and a number of other food trucks on FB and Twitter, but Indios stood out because of their unique offering of Mexican/BBQ style cuisine. Growing up in Kansas City, BBQ is always present, and our Mexican is equally delicious. Who ever thought putting them together could be so amazing? Indios was located in the West Bottoms near the haunted houses the evening I found them on Twitter. Upon arrival at the truck, I was greeted by the smiling faces of 3 middle-school aged boys. They were very attentive and took my order, offered condiments, utensils, and made sure my experience was great. No interaction with the owner/cook/father needed, these boys took care of everything! To the food, their torta ahogada had been on my mind for months. Who takes a classic Mexican torta and fills it with amazing smoked KC pulled pork? Indios Carbonsitos does. Added the onion, avocado, and all the topping to my HOT sauced torta. Mild, Medium, Hot, and XX available! I'm definitely trying the XX next time! The heat was great, but the texture of the roll, pork, toppings, and the amazing sauce made this truly melt in my mouth. With the owner being a true pioneer of Mexican/BBQ, you will not be disappointed. Go early and often to Indios Carbonsitos to enjoy food you will not find anywhere else!
